Howdy,
I am craving meatloaf. Does anyone have an easy and quick recipe for it?
How about Bar B Que meal loaf???
Ok, I am hungry here. Someone HELP!!

Sorry that I don't have a recipe for Bar B Que meal loaf but just thought I'd pass along the one I use... :)
Meat Loaf
A comfort food meal that can be made ahead and frozen, or
assembled early in the day and cooked when required.
1/2 c. catsup
2 Tbsp. vinegar
1 Tbsp Worcestershire sauce.
Combine the above ingredients in a small bowl and set aside.
1 1/2 lb. ground beef
3 slices of bread, finely diced with a knife
1/2 green pepper, chopped
1 small onion diced or 1/2 med. onion
3/4 tsp. salt
2 Tbsp. brown sugar or molasses
Dash of celery salt, and pepper and a pinch of mustard
1 egg, lightly beaten with a fork
1/4 c. milk
Combine all of the above ingredients and also mix in 1/2 of the catsup mixture.
Pack into a loaf pan. Spread the remaining catsup over the loaf.
Bake at 350 deg. for 50-60 min. until fully cooked.
This tasty loaf may be cooked then cooled, sliced or cut in half and frozen.
Reheat as needed.

I use the McCormick sesoning packet. I use half a packet of seasoning, 1/4 cup liquid (yours could be barbeque sauce), 1 egg, 1 slice bread or 5 saltine crackers finely crushed, and 1 pound ground beef. I mix all of these together and put it in a microwave safe dish. Cook on high for 10 min.I have always cooked my meatloaf in the microwave. Some people like it this way. Others do not. If you don't like it in the microwave, you can use the same recipe and just cook it in the oven.

Now, if I only had the strength and will to cook. I did go out and buy the meat and yes a mccormick seasoning package. I just don't want to cook now. I got home and threw in a load of wash. I need to practice the piano and get dd's evening work done. Where am I suppose to get the motivation???

Instead of using crackers or bread in your meatloaf, try using those french fried onions. The ones you use on top of green bean casserole. Yummy!!

I am proud of me!! I did it. I made the meatloaf. It is in the oven. I made 8 small loafs and 4 muffin cups. I thought that I could put the extra in the freezer. Next time I crave it than it will be ready for me!!
This was a great feat to accomplish!! I was exhausted today. Must be the late start that I had this am.

Yummy, yummy. :licklips: I love meatloaf of any kind and must try the onions. Kids, however, think there is nothing on this earth worse than meatloaf. :p

That is so true! When I was younger I despised it - or so I thought - now I LOVE it! :licklips: My dks actually eat it, but I expect that to change as they get a little older! LOL!

Mmmmm..... meatloaf!! That is one of our family favorites. I always use a basic meatloaf recipe (eggs, crackers, and whatever spices you desire) what really makes our meatloaf is we add about a cup of chunky salsa to the mixture, and then top the meatloaf with some salsa before baking! We always have mashed potatoes and green beans with it. If I would ask my family to choose any meal they wanted me to fix that would be it!

What a great idea... I never would have thought of using those in a meatloaf. I'm going to have to try that next time.
Kacee... how did the meatloaf taste? Hope you enjoyed it. I also make more than I need and then refreeze for another time when I don't feel like cooking. :D

Meatloaf
2 lb extra lean ground beef
1 onion
1 celery stalk
1 pkg of shake'n'bake (any kind)
1 egg
1 can of diced tomatoes
1 can of tomato juice
1 green pepper
salt and pepper
Put ground beef in a medium sized bowl. Add egg. Stir well. Add chopped onion, chopped celery, chopped green pepper, and shake'n'bake. Stir well. Put meat mixture in a casserole and shape meat mixture the shape of a bread. Pour diced tomatoes on top of meatloaf. Add salt and pepper. Pour tomato juice just a little less than half of meatloaf. Cook at 350F for 1-1 1/2 hours. Serve with mashed potatoes and rice. Pour tomato gravy from pan onto all.
