My youngest dd will be graduating in a few weeks and will be having an Open House for her on the 21st of June. I'm planning on serving a variety of meats and sandwhich buns, baked beans, potato salad... cake. I'd also like to find something that is really "different" than the norm... something that everyone would want/ask for the recipe. LOL Any thoughts/idea's as to what I could serve would really be appreciated. TIA...

I have a Swedish Meatball recipe that is great.....I can post it after work if you like.....you can serve it in a dish with toothpicks :)

The norm being the meats, baked beans and the potato salad... ANYthing... appetizers as well as salads or ?? If you've ever been anywhere and been "w:licklips:wed" by a certain food... enough to ask for the recipe (and have actually gotten it) please share. Thanks! :) :) :)

One thing that I have found that’s fun to do with various meats, is to serve different kinds of sauces rather than mustard/mayo ect. Like with turkey serve a raspberry chipotle sauce. For ham a pineapple or mango jalepeno salsa.
Here are some of my most asked for recipes. In fact, I am going to a recipe trading party and these first two are what I have been asked to bring.

Shrimp Pico de Gallo
I use premade Pico de Gallo from our deli section
( if you don't have that you will need to chop...
about 10 Roma tomatoes, 2 onions, one bunch cilantro and 6 jalepenos into fine bits...squeeze about 2 or 3 lemons)
to the Pico add about 60-70 cooked small sized shrimp cut into bite sized pieces (i get the fresh frozen)
add black pepper and garlic to taste
put all this in a ziplock bag over night
right before serving, add a couple of avocadoes chopped.
serve with chips (i like Frito scoops)


Basic Hot cheese dip
8 oz EACH of sour cream, cream cheese, velveeta, sharp cheddar cheese, colby, & monterrray jack
one small can chopped black olives
one small can Rotel tomatoes, drained.
Mix all this together, put into an oven proof dish. cover with foil. Bake at 350 for about 20-30 minutes. Stir and serve with chips.

To that recipe you can add a can of chili with no beans or crab...for two completely different tastes.


Raspberry Cheese tart
this sounds awful, but I have had people beg for the recipe!
Mix together about 2 cups each grated cheddar, colby and monterray jack, 1 bunch of green onions chopped and one cup of chopped pecans that have been sauteed in butter...add in just enough mayo to moisten and help it stick together
Spread in the bottom of a pie or tart pan.
Cover with good raspberry preserve.
Refridgerate
Take out about 15 minutes before serving and serve with fritos or crackers.



Old Faithfull......
Brie and Raspberries in Puff Pastry

1 sheet puff pastry (half of 17 1/4-ounce package), thawed
1 small wheel Brie, about 6-inches in diameter, rind removed
1/2 pint fresh raspberries
1 large egg, lightly beaten
Preheat the oven to 360 degrees F.

Place the puff pastry on a lightly floured surface and roll out to a rectangle, about 8 by 16-inches. With a sharp knife, cut into 6 to 8 equal squares.

Cut the Brie into 6 to 8 equal wedges. Lay 1 wedge of cheese diagonally in the center of each pastry square, pressing down to flatten. Top the cheese with a portion of raspberries.

With a pastry brush, brush egg onto the outer edge of the dough, fold the dough in half and press to seal. Place the pastry packages on a lightly greased baking sheet and bake until golden brown and risen, 12 to 15 minutes.

Remove from the oven and let cool 5 minutes before serving


I also do a dip very similar to one that Kat does
2 (8 oz) cream cheese
1 (8 oz) sour cream
2 tbs milk
2 jars chipped beef, chopped
1 green pepper chopped finely
6-8 jalepenos chopped
about a tsp of black pepper
mix all ingredients together, put into an oven proof dish cover with 2 cups chopped pecans that have been sauteed in butter
Bake at 350 for 30 minutes..serve with chips
Guys seem to like this. I have actually had men ask me for this recipe!

All of this stuff can be made the day or two days before so you aren't frantic the day of the party.

actually got the recipe for one from a friend who did a Baptism Party


Swedish Meatballs
1 LB hamburger 3/4 C. bread crumbs
1 tsp cinnamon 1 Med. Onion (finely chopped)
1 Med. egg 1/4 tsp salt
1 tsp nutmeg 1/4 pepper

**small bowl of flour

Mix everything except the Flour in a large bowl. roll into small balls (small golf balls) roll in flour...you can either fry them in oil/butter until brown...turning frequently with a spoon...or bake them in the oven (350) for about 30 minutes...checking them offten and turning the frequently...(I prefer the stove top myself) ;)

for gravy add one can of Cream of Mushroom soup...yes I said soup :) reduce heat and cover for 15 minutes, I add about 1/2 cup cream to this for a lighter sauce...you can use any gravy you wish....serve in a dish with toothpicks....:drool:

1 lb can cream corn
1 cup bisquick or masa flour
1 egg beaten
2 Tbs melted butter
2 Tbs sugar (optional)
1/2 C. milk
1 4 oz can green chilis, sliced
1/2 Lb. Jack cheese thinly sliced

Combine corn, Bisquick mix, egg, milk and sugar and mix well.
Turn 1/2 of batter into well greased 8X8 in. glass baking dish. Cover with chilis, layer cheese, then rest of batter, more cheese... Bake at 400 degrees about 20 minutes or until brown. cool for about 15 min.

CORN CASSEROLE

8 oz. can creamed corn
8 oz. can regualr corn, drained
1 box Jiffy corn bread mix
8 oz. sour cream
1 cube butter melted
2 eggs

mix together, pour into greased 8 X 8 glass baking dish, bake for 30- 35 minutes 350 degrees.

Couple more ideas

make stuffed mushrooms by mixing cream cheese and sausage and little seasoning salt and then baking with a little bit of water in the bottom of the pan for about 20 minutes
or
cream cheese and prepared pesto. Stuff and bake. YUMMY!!!


Let us know what your final menu ends up being. I just love parties!!!
