Did we do this already? LOL

I am making a black eyed pea dip and a veggie tray for nibbles, brisket, green bean bundles, pasta salad, peppermint brownies and a sf/low fat cheesecake with strawberries. My cousin is bringing a potato salad and rolls. My aunt is bringing a fruit salad and deviled eggs. My dad's wife is bringing baked beans.
Here are the green bean recipes and pasta salad..they sound so good!!!

1 lb. curly pasta
grape tomatoes
Fresh mozzarella
1 can sliced or diced olives


dressing:
1 TB balsamic vinegar
pinch salt
1/2 cup olive oil
1/4 cup red wine vinegar

Cook pasta, drain. Toss little bit of olive oil in to keep from sticking and
chill. Then add grape tomatoes (cut in half), tub of feta, can of olives, and
summer sausage cut in little pieces. Mix dressing in measuring cup, pour over
pasta.


Green bean bundles
either fresh or canned whole green beans
1 stick of butter melted
2 Tbs. soy sauce
1/2 c. brown sugar
garlic powder to taste

wrap 5-6 green beans in a piece of bacon secured with a toothpick. I cut
one piece of bacon into thirds for the right size to wrap with. Then put
them in a 9x13 baking dish, pour the sauce over them, cover with foil and
bake at 350 degrees until tender.

Yummm Ann~

I think dads gf is making Lazania(sp???) to start...and Fresh Ham(my favorite). And knowing them stuffed mushrooms and veggies. It's very traditional around here. Same thing every year. Which Im glad about!

Ann, do you pre-cook the bacon before you wrap the beans with it? The pasta sounds delicious.

We're having the ole traditional Easter Lasagna :rolleyes: :lol:. We'll be home...no company, so we decided to just vote on the dinner. (I voted for brunch at a restaurant...everyone else voted for mom's lasagna. Hmm..conspiracy!)

Personally I'm making potatoe and macaroni salad (boring!) and a warm fruit salad.

Dinner is at mil's house and she's doing ham and scalloped potatoes. Different people are bringing jello salad, deviled eggs, cake, other dessert, green bean casserole, lettuce salad, dinner rolls and veggie tray. Ugh. I just noticed how many salad-y type dishes there are. I should have made another vegetable, instead. There will be 25 people and two of the families have said what they're bringing, so hopefully they'll fill in the gaps! :D

Ann, I have another question about the gb bundles. Approximately how long does it take to bake if you're using canned whole gbs? Our fresh produce down here is anything but! :rolleyes: I would consider it a minor miracle to find gbs worth looking at in our produce sections.

The brisket sounds good too! :licklips: It's been years since I've had brisket. My grandma used to make it like nobody's business! :)

I am cooking a big turkey dinner with mashed potatoes, stuffing, carrots, turnips, dinner buns, and a brocolli/Cauliflower salad...We invited friends over to join us and they are going to bring the dessert...

We are also going to do a mini egg hunt in the back yard for all the kids. There will be 6 including mine.. Actually they are my DCK's lol............

Pam, its really a matter of the bacon cooking, so maybe 30 minutes at 350. My canned ones are very small and kind of mushy so I just ended up making a casserole of the ingredients and cooked the bacon and chopped it up. Actually that gives me more room in my frigde too!

I'm making BBQ Lamb chops with baked potato and Brocolli. Accually, the menu needs a little fleshing out I think. Like, I was going to tenderize the lamb with a little wine and rosmarry before BBQing it but I really have no idea what I'm doing. If anyone has any suggestions for making it special, I'd surely appreciate them. ;)

Jeannie, rub olive oil and then rosemary all over the lamb chops...be generous, then black pepper...let it sit over night.

My mom is out of town as usual and dh's mom didn't say a word about getting together and I had not planned on anything. I put a lot of time into tonight's gathering of friends that I didn't think about Easter dinner, which is fine with me. :)

That sounds great Ann, but what am I suppose to do with the whole ... I mean half bottle of red wine I just bought?

Ann, that sounds more doable. :) Maybe I can try the bundles when we're back in the mid-west this summer and can get fresh produce! :licklips: Sounds yummy!

Dh made homemade meatballs with Spagetti and garlic bread. It was awesome. Kids love the untradional way we eat on Easter.

but if that's what you eat every Easter, then it is traditional! ;)
