Okay ladies, let me see your best one dish recipes. Since they have packed my stuff, I have one very small frying pan, a medium size pot, and a casserole dish. I am running out of meals to make. Does anyone have any recipes for me to try. Thanks in advance.

Yeah! That is what we were going to do too, but since we are getting out, we are trying to save money. That is why we decided to keep a few things. LOL!

I made a version of your poor man's stroganoff (Sp?) last night. It was very good. Thank you.

It is funny that you mentioned spaghetti. That is what we are having tonight. Soup and sandwiches will probably be tomorrows lunch. LOL!!

Thank you for all of your suggestions.

I agree with you there. Tomorrow (Wed. ) is dh's birthday though, so I am going to try and make it special. I don't know what I am going to fix though. It still may be soup and sandwiches.

Have you ever tried Chicken Helper's Fettuccine Alfredo? Our family really likes that, and your skillet is all that you would need!! We usually have a salad, and bread with it... you'd never guess by the taste that it is such an easy meal to create. Also the Stove Top Oven Classics are pretty good, and easy. You could use your casserole dish for that!!

I have a pork chop recipe for you to use in the casserole dish. I put a small amount of water in the dish, then I put some cut up apple and cut up sweet potato in the bottom of the pan. Next I put the pork chops (on top of the apple and potato). Bake covered at 350 for 30 - 45 min depending on how thick the chops are.
I also make a chicken rice bake
1 can of Campbells condensed cream of Mushroom soup
    1 cup water
3/4 cup uncooked regular white rice
    1/4 tsp paprika
    1/4 tsp pepper
    4 chicken breasts
mix soup water rice, paprika and pepper in dish, place chicke on the rice mixture cover.bake at 375 for 45 min or until chicke and rice are done.
    Serves 4
    I hope this helps.

I can always use recipes. I am staying with my parents now, so I have dishes to use, but I love getting new dishes to try anyway, so if you have some I would love to see them. I am sorry that it took so long for me to respond. I must have missed your post the first time. I was just looking around at old ones since I was caught up for a change and I came across this. Sorry, I didn't ignore you on purpose.

This one is quick, easy, and good when hot, but if allowed to cool isn't so good.

    Ingredients
    2 cups Heavy Whipping Cream
    6 tablespoons Sweet Cream Butter
12 ounces Bay Shrimp (bag of cooked salad shrimp works well)
    1 Pepper , to taste
    1 Salt , to taste
1 cup Fresh Spinach , julienned (I use more)
    1 teaspoon Garlic , minced
1 12-16 ounces Penne Pasta (or whatever type you like)
¾ cup Parmesan Cheese , grated
    1-½ cups Mushrooms , sliced

    Instructions
Cook pasta according to package directions. In large skillet, heat cream and butter. Add mushrooms, garlic, salt and pepper to skillet and simmer for 2-3 minutes. Add shrimp to skillet and blend in parmesan cheese. Continue to cook sauce to a medium-thin consistency. Blend in hot al dente pasta and spinach. Serve immediately.
