    yummy enchilada recipe

    Creamy Chicken Enchiladas

    2 1/2 cups chopped cooked chicken
    1 cup sour cream (I used low fat)
    1 can cream of chicken soup (I used the 98% fat free)
    8 oz shredded colby and monterey chees
    1/4 cup chopped cilantro
    12 flour tortillas
    1 1/2 cups salsa

    Mix chicken, soup, 1/2 cup sour cream, 1 cup of cheese and 3 Tbsp of the cilantro.

    Spoon about 1/4 cup chicken mixture down the center of each tortilla; roll up. Place seam sides down, in greased 13x9 baking dish. Top with salsa and remaining cheese.
    Bake at 350 degrees for 25 minutes. Sprinkle with remaining cilantro. Serve with sour cream.

    Yum!!!!!!! you could layer them too and it would be good (and easy!)

    If you use the low fat soup and sour cream I don't think it's that bad....?

    It sounds really good... and easy, which is what I like. LOL Thanks for posting the recipe. I'll definitely give it a try.

    enchilada brown gravy

    when you go to a mexican restauraunt and order enchiladas they come covered in a light brown gravy w/ a little cheese mixed in. all they offer in the grocery stores is a red enchilada sauce either in a can or in a package, like ol el paso. how do you make cheese and beef enchilada w/ the brown gravy???

    it's a chili gravy..get a can of chili/no beans

    oh this sounds great... will have to try them for sure.

    Have you tried "jack cheese" on them?? Bil has decided that he likes jack cheese.. lol think the "hot" bug has hit him .. lolol
