    Brunch ideas

    Sil was suppose to be stopping in for supper tomorrow but plans changed and now its for Monday morning brunch. I don't know what to serve!

    I could do the pancakes, sausage route, but we don't eat that anymore.

    If I do fruit and muffins what else would you serve with it?

    You could just have cold stuff and have sliced meats to go with. Or eggs, quiche or ham roast?

    I have an easy egg casserole recipe you can do the night before.
    How about migas..scrambled eggs with cheese (and any other mexican spices you like) wrapped in tortillas?
    You could do different types of bagels and cream cheeses with fruit.

    Cherry Cheese Turnovers


    Ingredients:
    1/4 cup (2 ounces) cream cheese, softened
    1/2 cup cherry pie filling
    1 package (8 ounces) refrigerated crescent rolls
    1 egg white, lightly beaten
    1 tablespoon sliced almonds, chopped


    Directions:
    Preheat oven to 375°F. In Small Batter Bowl, combine cream cheese and cherry pie filling.
    Unroll crescent roll dough; roll out dough to 8 x 15-inch rectangle using Baker's Roller™. Cut 8 circles using Cut-N-Seal™.
    Place 2 teaspoons cherry mixture in center of each circle. Fold dough in half, matching edges; seal with Cut-N-Seal™. Place on flat Baking Stone. Brush each turnover with egg white using Pastry Brush. Sprinkle with almonds. Bake 15-17 minutes or until light golden brown.
    Yield: 8 turnovers

    What about fruit smoothies? Just google "fruit smoothies" and scads of recipies come up.

    I just made this for baptism and it was really easy to prepare and yummy!! Served fresh fruit and muffins with it.

    Sausage Egg Bake:

    2# Jimmy Dean sausage
    1 box seasoned croutons
    2 cups of shredded sharp cheddar cheese
    4 eggs beaten
    2 1/2 cups of milk
    3/4 teaspoon of dry mustard
    1 can cream of celery soup
    1/2 cup of milk

    grease well 9 x 13 pan

    layer in pan in this order:
    croutons, cheese, cooked meat

    combine eggs, milk and mustard; pour over the layered ingredients

    cover and refrigerate overnight, in the morning combine the soup with 1/2 cup of milk and pour over the egg dish. Cover back up with foil and bake at 300 for 1 1/2 hrs.

    Thanks for all the ideas ladies.
    We decided to go with mini quiche, cinnamon french toast, sausage patties and potato patties, muffins and a fruit tray.

    Glad you posted to this, I was looking for brunch ideas too. Dh is being installed as an elder in our church and I wanted to do a brunch afterwards. However, after looking at recipes, I remembered we'd be doing late service that day and it'd be lunch time when everyone got here. Guess I'll start over with my menu. LOL
