    zucchini recipe

    I made these last night and everyone loved them...

    Connie's Zucchini 'Crab' Cakes

    "These really taste like crab cakes but without the crab, and is a really good way to utilize that bumper crop of zucchini!" Original recipe yield: 4 to 6 servings.


    INGREDIENTS:
    2 1/2 cups grated zucchini
    1 egg, beaten
    2 tablespoons butter, melted
    1 cup bread crumbs
    1/4 cup minced onion
    1 teaspoon Old Bay Seasoning TM
    1/4 cup all-purpose flour
    1/2 cup vegetable oil for frying

    DIRECTIONS:
    In a large bowl, combine zucchini, egg, and butter or margarine. Stir in seasoned crumbs, minced onion, and seasoning. Mix well.
    Shape mixture into patties. Dredge in flour.
    In a medium skillet, heat oil over medium high heat until hot. Fry patties in oil until golden brown on both sides.


    And this... (was a little dry, I'll use more squash next time.)

    Yellow Squash Casserole
    Tender squash, gooey cheese and crunchy crackers make
    this a memorable side dish or a hearty main course. This is
    a great dish that can be made with low-fat ingredients
    and is still just as good! Prep Time: approx. 20 Minutes.
    Cook Time: approx. 30 Minutes. Ready in: approx. 50
    Minutes. Makes 1 - 9x13 inch pan (10 servings).

    4 cups sliced yellow squash
    1/2 cup chopped onion
    35 buttery round crackers, crushed
    1 cup shredded Cheddar cheese
    2 eggs, beaten
    3/4 cup milk
    1/4 cup butter, melted
    1 teaspoon salt
    ground black pepper to taste
    2 tablespoons butter


    Directions
    1 Preheat oven to 400 degrees F (200 degrees C).
    2 Place squash and onion in a large skillet over medium
    heat. Pour in a small amount of water. Cover, and cook until
    squash is tender, about 5 minutes. Drain well, and place in a
    large bowl.
    3 In a medium bowl, mix together cracker crumbs and
    cheese. Stir half of the cracker mixture into the cooked
    squash and onions. In a small bowl, mix together eggs and
    milk, then add to squash mixture. Stir in 1/4 cup melted
    butter, and season with salt and pepper. Spread into a 9x13
    inch baking dish. Sprinkle with remaining cracker mixture,
    and dot with 2 tablespoons butter.
    4 Bake in preheated oven for 25 minutes, or until lightly browned.

    That's funny I made zucchinni too.

    I sauteed them in a pan then added some sliced mushrooms and alittle butter salt pepper parsley. they were good. Had no Idea how to make it.
