Would this work for the party?

It would probably be easier to make potato salad, but would something like this work cold? http://www.razzledazzlerecipes.com/q...d-potatoes.htm
They seem fairly easy. I could preboil the potatoes ahead, and then make the mixture ahead and put into a ziplock bag. The day of all I would need to do is spoon the mixture in. I would have access to an oven at the party and could broil them, but it might be more work than I want to do! LOL
Do they even sound like they would be appetizing cold?

in case I haven't said, the menu is:

Snackage/Appetizer (keep these out for whole party)
    Chips and salsa
    Veggies and dip

    Main Course
    Brisket
    Buns
    Pickles
    Onions
    Sauce
    Potato something
Pinto beans with pico de gallo
Fruit Salad in a watermelon bowl

    Dessert
Ice Cream sandwiches for the kids
    Decorated cake

    Drinks
    Keg (2)
    Wine
    Drinks for the kids- type

Sounds like it would be good warm or cold... do you have time to make and try one ahead of time????

They sound like they would be good to me. That sounds like a great menu. When is the party and where is it at again? I think my invite got lost in the mail.

edited to add- Maybe you could find a place that would let you cater and pay your insurance. You are really good at that too!

The potatoes sound delicious but I don't think I'd like them cold. Nice menu!

    The menu sounds perfect.
I agree... this is something you'd do well with. I could even picture you catering weddings... Hell Ann... whatever you put your mind to you're good at, so I could picture you doing just about anything. Actually... Starbucks is lucky to have you... you're WAY too good for them!!!

    ITA!!!

I worked a big party for a friend's sister. It is a huge event she does every year even though she "retired" from the party business. She made a ton of money doing it and got to travel the world. Would your dad's company pay you to put on their big yearly party?

What about being a party planner, Ann, instead of caterer? That way you wouldn't be liable for food poisoning, etc, but could still have the fun of coming up with the menu, decorations, themes, etc.? I know I'd hire you in a heartbeat! You have the most awesome ideas.

i would do that too! problem goes back to insurance. it would have to be a pretty big company to offer benefits, but i have been searching a couple of job sites and sent out a couple of resumes. one is an assistant to the head of event planning for a private club not far from here. ad says it pays $10 - 12 an hour so a little bit more, but depending on what the benefits are and there is a health club! but definitely a full time job.

I thought it was your dad's firm that put on that big shindig every year. I think you saw Barry Manilow one year, maybe Dolly Parton another?

no, we are guests. It's my dad's attorney and his wife handles all of the arrangements. Did you think it was in his backyard all these years? Wish it was! LOL that house/land is phenomenal.
