    Dinner July 3/06

    What are ya'll having? I need some ideas for this week.

    Salad,

    We're having roasted veggie pitas. I may have to cook up some chicken, too, just so there's not a mutiny, lol!

    going out to our fav mex group with our dinner group..of course all of them don't work tomorrow!!!!!!!!!!!

    Just your favorite marinated, roasted veggies in a pita pocket. I've got yellow squash, sweet onions, zucchini and bell peppers marinating for it right now. For the marinade I take about 1/4 - 1/3 c. extra virgin olive oil (depends on how many veggies you're doing... I usually do a ton for leftovers), a few cloves of garlic, crushed, pepper, maybe Italian seasoning, maybe Montreal Steak seasoning.

    yum, i make a variation of that, but never thought to put them in a pita!

    Me either till I saw it on another board. Sometimes I use Italian dressing for the marinade, too. The Montreal Steak stuff gives it a bit of a zing that I like though.

    I found a Cola Pot Roast recipe on another board and am trying that. It's been in the oven just about 5 hours, so it had better be very tender.

    Just finished dinner here. I made homemade hamburgers on the grill and made a tomatoe sauce to cover them (I used veggie oil, garlic, tomatoe paste and fresh grape tomatoes halved). Yummm it was good. Oh, and I bbq'd potatoes too. We didn't have a veggie. I meant to plate some salad but forgot .

    Any ideas for side dishes for this? I'm used to my veggie being the side, instead of the main. We're going to have mandarin oranges for dessert.

    I don't think you need a side if you are having veggies AND chicken. You have the pita, so all our bases are covered (I think). The oranges sound delish. That reminds me...picked up some (fruit I can't think of the name right now, lol)...I meant to cut it up to eat after dinner. Where's my brain?

    I had some lemon pepper pork chops from M&M's meat market in the freezer so it was that. Had a few chicken wings so threw those on the grill with it. Slice up potatoes and carotts in a foil bag with a bit of butter and salt/pepper and cooked those on the grill.
    The pitas with veg sound great Pam!

    I don't think I've ever heard of bbq'd potatoes. How were they? Recipe please? Thanks

    We snacked for supper but had chicken tacos and refried beans for lunch. It was a hit. Dgs loved them and even dgd ate the chicken chopped very fine. I thought it might be to spicy but she liked it.
