    I made the best dinner tonite

    if i say so myself!

    I had left over queso from dh's party (i make mine with velveeta, rotel, cream cheese, sour cream and grated chedder and jack). I also had a whole rotisserie chicken that dh bought that needed to be eaten.
    I combined the leftover queso with a can of cilantro rotel and cream of chicken soup. put that in the bottom of my pan, then put a layer of soft flour tortillas, then the chicken (shredded), and repeated it another layer and added grated cheese on top. Served it with frijoles and a salad of avocado and tomatoes.

    Yum! That sounds so good!! We had fajitas and I was just thrilled with myself that I even cooked. LOL

    Yum! I'm having ham and cheddar on a bagel, and dh is having left over pizza!

    Sounds delish...that reminds me...I have eaten dinner yet and I'm hungry, lol. Fed ds and dh bacon and scrambled eggs (had to get the bacon ate), but I wasn't hungry then...I sure am now, lol.

    Yum! I just made a creative meal myself (creative for ME that is. LOL) I was marinating chicken in a sun-dried tomato salad dressing. I didn't know what I was going to serve with it, so I thought of my favorite combinations. I roughly pureed marinated artichoke hearts, sun-dried tomatoes and feta cheese together. It made a thick spread. I actually grilled my chicken and them put this spread on top and baked it again. Next time I might pound the meat and roll this up on the inside. Oh, and I added black olives to dh's mixture.

    That sounds great! A couple of nights ago I pounded and then marinated the chicken and rolled up artichokes, fresh basil and tomatoes, I didn't have feta so I used provolone, then baked it. Brichard loves all the modifications of that chicken recipe you gave us!

    What was the recipe again? LOL Was it spinach and feta? I never did end up making it.
