    Cold veggies?

    I know there are salads, cucumbers and onion, marinated veggies, pickled beets, carrot and raisin salad, etc., but I'm needing more cold veggie/veggie salad ideas for summer time.
    Today is a new day and a good day to start anew.

    My summer favorite:

    Moms Pickled Cukes and onion Salad

    3 large cucumbers
    1 large onion (yellow or white)
    1 Tbs salt
    1 1/2 Cup
    1 Cup White vinegar
    1 tsp celery seed

    Cut Cucumbers and onion into thin slices, place in a large bowl, cover with salt and let stand preferably overnight but at least hours.
    Drain liquid off of cucumbers and onions.
    In a sauce pan combine sugar, vinegar and celery seeds and bring to a rolling boil, remove from heat and place in a bowl that can withstand the hot liquid, pour this hot mixture over drained cucumber and onions, refrigerate until cold.

    I just love this salad!!

    Broccoli Raisin salad

    INGREDIENTS
    10 slices bacon, cooked and chopped
    2 bunches broccoli, chopped
    3/4 cup raisins
    3/4 cup sunflower seeds
    1/2 cup red onion, diced
    1 1/2 cups cole slaw dressing
    or make your own dressing with...
    3 tablespoons white wine vinegar
    2 tablespoons white sugar
    1 cup mayonnaise

    Yes! Any kind of cold veggie salad or recipe would be great.

    Angie and Renee, my mom makes those too and I love them! I've asked for directions on the cuke and onion thing so many times it's embarrassing though, lol. I've got the ingredients for both on my grocery list now, thanks.

    My Mom used to make this when I was growing up. Yum!

    I love broccoli salad, too!

    I like peas with mint but not minted peas LOL

    How about this
    2 1/2 cups frozen peas
    1 pound sugar snap peas, strings removed
    2 tsp sugar
    2 tbsp white wine vinegar
    1 tbsp extra-virgin olive oil
    1 tbsp lemon juice
    1/4 cup freshly chopped mint
    Method in a large pot of water to a boil. Add frozen peas and snap peas, and cook for 2 minutes. Drain and rinse immediately with cold water to stop cooking, and empty peas into a large bowl.

    In a small bowl, combine sugar, white wine vinegar, olive oil lemon juice and mint. Drizzle over peas. Toss, then refrigerate for a couple o fhours until cold
