Getting organized

I really want to get my paper work organized. In this day and age of online bill pay and everything available on the computer, do you still keep copies of bills you have paid? I used to save all my cell phone bills, utilities, and more, but unless I need them for my year end taxes, I'm going to start pitching them. I really need to clean out my filing cabinet too.

My filing method is a bit hit and miss, I know I have what I need and where it is but it's not necessarily in alphabetical order. I must say that I do go through it all twice a year and sort it out properly and throw away/shred what's not needed.
I only keep bills for the previous 2 payments, most bills (electric, phone, land rates etc come in every 3 months)
I have 2 concertina files 1 for the A-Z bills etc and 1 for warranties and other odds and ends that you seem to collect.
Online bill paying I have a desktop folder I keep paid stuff in and empty every now and again so that I have only the last 3 paid bills in there
