    Banana Muffins

    This is an easy recipe from the Junior League of Houston Cookbook


    1/2 C shortening
    1 C sugar
    2 eggs
    1 C mashed ripe banana (2-3 bananas)
    1 1/2 C sifted flour
    1 tsp nutmeg
    1 tsp soda
    2 tsp hot water
    1 tsp vanilla


    Cream shortening and sugar. Add eggs and bananas; mix well. Stir in flour and nutmeg. Dissolve soda in hot water; add to banana mixture. Stir in vanilla. Fill greased muffin pans or paper baking cups about half full. Bake in 350 oven for about 20 minutes or until golden brown.
    Makes 24 medium muffins.

    They seem to stay really moist and fresh for quite a long time.

    Nutmeg??? Hmmmm....that's one spice I've never used in banana muffins. I ususally add some cinnamon to mine.

    When you say "shortning"....does that mean you use lard, or margarine???

    the nutmeg gives it a nice little taste..
    like crisco..i use the bars

    can I have your blueberry recipe?

    Smell that? Yummy banana muffins fresh out of the oven. Don't tell Brichard though........too fattening!

    Here you go...

    Blueberry Muffins

    Mix together:

    3/4 cup milk
    1/2 cup vegetable oil
    1 egg

    Mix together:

    2 cups four
    1/3 cup sugar
    3 tsp baking powder
    1 tsp salt
    1/2 to 1 tsp cinnamon
    1 cup fresh/frozen blueberries

    Blend dry and wet ingredients until just moistened....batter will be lumpy.

    Grease bottom only of muffin tins or line pans with paper baking cups

    Bake @ 400 degrees for 15-18 min. Makes 12 medium muffins.
